The Kopi Story
Coffee or kopi-o is usually drunk in the tradition way in Singapore. The way they make it is the coffee shop…black and strong. Singaporeans still don’t appreciate real coffee, coffee without substitutes. They generally like the like coffee. “Good quality coffee should be lighter in colour”. During the Korean War in the 1950s when coffee prices shot up, coffee beans were mixed with corn or wheat.
This makes it a coffee mixture. Even after the War we still insist on this coffee mixture because we are so used to it. So what we are drinking is actually a diluted form of coffee. Pure coffee, when brewed, isn’t so back.
